CHRISTMAS FRUITCAKE- SUPERNATURE STYLE

We want to share one of our favourite recipes for the festive season ahead…

SUPERNATURE FRUITCAKE 😍😍😍

Perfect as a “what to bring to the dinner party” add-on, or for some family baking fun… get all your little helpers at the ready, because this is going to blow your stockings off. 

INGREDIENTS

1 kilo of mixed dried fruit

2 cups of fruit juice (we use apple)

2 cups of self-raising flour *use gluten free if you fancy

Then for our personal, supernature twist:

Add as many as you like but we go for…

2 packs of supernature Raspberry Chocolate Raisins

2 packs of supernature Chocolate Covered Hazelnuts

 

RECIPE

  • Place mixed dried fruit in medium saucepan
  • Pour over the fruit juice
  • Bring to the boil
  • Simmer for 3 minutes
  • Remove from the heat
  • Leave to cool for 2 hours
  • Preheat the oven to 150oC for fan and 170oC for conventional
  • Line a 20cm round tin
  • Sift flower over soaked fruit and stir well until completely combined
  • Add another half cup of juice if needed to make a moist mixture
  • Pour in supernature if using and stir in
  • Pour into the cake tin and bake for 2 hours on lowest shelf
  • Remove and leave to cool in the tin
  • Wrap in foil and keep in an air-tight container

We love this little number to get our chocolate hit whilst feeling the Christmassy season. Trust me, untangling all those Christmas lights and tinsel will feel like a breeze when you have a slice of this heaven to look forward to.
